Mom's Tacos

We call them Mom's tacos, but really, this is the way my great-grandmother made tacos, and the way the women in our family have made them ever since. It is by far the most requested meal by our friends and family. I hope you enjoy them as much as we do.

Ingredients:

Olive Oil
Salt & Pepper to taste
2 lbs Ground Beef
24 Corn Tortillas
1 Head Iceberg Lettuce
1 Lg Yellow Onion
3/4 lb Monteray Jack Cheese, grated 

Mix head of chopped lettuce and onion with salt and pepper to taste and set aside.

Pat 3 - 4 tablespoons ground beef onto one side of tortilla. Repeat with remaining tortillas. Fry in enough hot oil to just barely cover tortillas. Fry until tortilla is golden brown and meat is cooked through. We always place open tortilla is skillet and close quickly with spatula. You can also secure them closed with a toothpick which you should remove as soon as they are cooked. Drain cooked tacos on paper towels. Sit tacos upright in a casserole dish and stuff with generous amount of lettuce and onion mixture. Top with cheese and bake at 350 until cheese is melted. Serve with choice of salsa and enjoy!

Pat meat onto one side of tortilla.



 

 Stuff lettuce mixture into cooked tacos.
